Garlic Herb Hasselback Potatoes – a simple yet delicious side dish. Thinly sliced russet potatoes that are brushed with garlic herb-infused butter and baked until each bite is perfectly tender.

The Best Garlic Herb Potatoes

A good baked potato is the ultimate side dish. Wouldn’t you agree? Potatoes cater to so many different flavors and they go with just about any main course. And here comes the new baked potato to my recipe collection, my friends – Garlic Herb Hasselback Potatoes!

I can’t begin to tell you how delicious these potatoes are. I could eat them alone and not even need a main course! The potatoes come out perfectly crispy on the outside and tender and buttery on the inside. Not to mention the delicious herb and garlic-infused butter that’s brushed on the potatoes before baking!

The butter seeps into each and every slit for herby garlic flavor in every bite. You guys are going to love this one. I can’t wait for you to try them.

What Are Hasselback Potatoes?

Hasselback potatoes look like incredible little pieces of food art (in my opinion!). The little fan-like slices are cut deep enough through the potato so that the potato stays whole and intact. It looks so fancy but is simple to do yourself.

The name comes from a restaurant in Stockholm, Sweden called Hasselbacken. This restaurant is where the first Hasselback potatoes were crafted around 1940. Hasselback potatoes have been popular in other restaurants and homes ever since.

Recipe Ingredients

Here is what you need to make these Hasselback potatoes at home. The ingredients are very simple and I bet you already have them at home. Don’t forget to check out the recipe card for the procedure and exact ingredient amounts.

  • Russet Potatoes: Also known as Idaho potatoes, russet potatoes are perfect for this recipe because they are often large and dense. They won’t fall apart when you do the Hasselback cutting technique.
  • Olive Oil: You could also use avocado or sunflower oil.
  • Salt and Pepper: Don’t skip out on this seasoning step! A little salt and pepper bring this potato’s flavor to life (especially the skin).

For the Garlic Herb Butter:

  • Butter: I like to use unsalted butter so the mixture doesn’t end up too salty. Using unsalted butter allows you to control the sodium level.
  • Fresh Garlic: This recipe calls for 3 cloves, but if you want more, go ahead! Garlic and potatoes pair so perfectly together.
  • Fresh Herbs: I like to use hardy herbs like rosemary and thyme because they won’t burn in the oven. You could also use oregano or sage.
  • Parmesan Cheese: Adding cheese is optional, but definitely worth trying! Adding the parm also adds a bit of salt, so keep that in mind when seasoning the potato throughout the recipe.
  • Fresh Parsley: This is for garnish. You could also use fresh chives.

What Potatoes Are Best for Hasselback Potatoes?

I like to use large russet potatoes for this recipe. They are shaped perfectly and have a great soft and buttery texture for baking and roasting.

You could also use Yukon gold potatoes or red potatoes. Even if they are a little bit smaller, that’s ok. Just cut carefully and slowly and you’ll have the same results!

Recipe Variations

Before we get started on how to make these Hasselback potatoes, I want to share a few variation ideas. Just in case you’re out of something or you need to follow a certain diet.

  • Ghee instead of butter. You can absolutely use ghee for this recipe. It’s a great healthy substitute to use.
  • Mix up the herbs. You can use whatever herbs you like. Though I do prefer using hard (or woody) herbs like rosemary and thyme for their flavor and durability. Some others to try are oregano and sage.
  • Add unique ingredients. You can play with the flavors here. Maybe add some sliced jalapenos to the infused butter! Or add a drizzle of truffle oil as a garnish. Get creative! I’d love to hear what you come up with.

How to Make Garlic Herb Hasselback Potatoes

This recipe takes about 15 minutes to prep and then you just need to wait for them to bake in the oven. Let’s get started.

Prep the potatoes. Potatoes should be cleaned before baking them. Also, you want to be sure they are dry so they crisp up in the oven.

Make the thin slices in the potatoes. The Hasselback procedure is quite simple. In fact, there’s even a tool for it. But if you don’t have the tool, don’t worry. You can also use two chopsticks (one on each side) to act as a natural stop while you cut the thin slices.

Season the potatoes. Next, place the potatoes on a baking dish and season with olive oil, salt, and pepper.

Make the garlic herb butter. Then mix the melted butter, garlic, and fresh herbs.

Add the melted butter to the potatoes. Next, brush the potatoes generously with the garlic and herb butter mixture.

Bake the potatoes. Lastly, bake the potatoes for about 50-60 minutes. You’ll know that they are done when they are fork tender.

Garnish and enjoy! Sprinkle some fresh parsley and parmesan on the potatoes and serve immediately.

Tips for Success

Here are a few things to keep in mind when making this recipe.

  • Use a sharp knife. This seems obvious, but you’ll be able to make thin and precise cuts with a sharp knife. Plus, you’re less likely to slip and cut yourself if you have a sharp edge that goes right where you want it to go!
  • Don’t cover the potatoes while baking. The potatoes will cook just fine being uncovered. I know some of you probably are used to wrapping potatoes in foil! But the skin will get nice and crispy if you leave it uncovered. And that’s what we want – crispy, buttery skin.
  • Add the cheese at the end. Just like with a pasta dish, the parmesan is best added right before serving. This way you get its fluffy texture and it doesn’t get lost during the baking process.

What To Serve with Garlic Butter Potatoes

How to Store & Reheat Leftovers

These Garlic Herb Hasselback Potatoes make great leftovers! I’ve been known to eat them in the morning with a fried egg – yum!

Simply storing them in an air-tight container or even a silicone bag would work. They can stay refrigerated for up to 4 days.

You can reheat it quickly in the microwave. If you have more time, I suggest reheating in the oven or the air fryer for the best results. I suggest reheating for 8-10 minutes in a 350F oven or air fryer.

Ingredients

  • 56 russet potatoes, washed
  • 1 tablespoon olive oil
  • salt & pepper

Garlic Herb Butter:

  • 3 tablespoons of melted butter, unsalted
  • 3 garlic cloves, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 23 tablespoons of parmesan cheese (optional)
  • parsley to garnish

Instructions

  1. Preheat oven to 425°F.
  2. Rinse and pat dry potatoes. 
  3. Using a hassleback potato cutter, place one potato in the cutter, slice the potatoes thinly leaving about 1/2″ on the bottom.  (If you don’t have an hasselback cutter, just use two chopsticks. Place one on either side of the potato, this will create a natural stop for your knife so you don’t cut all the way through.) Repeat this process with all of your potatoes.
  4. Place potatoes in a baking dish. Brush potatoes with olive oil and generously season with salt and pepper.
  5. In a small bowl, add melted butter, garlic cloves, fresh rosemary and fresh thyme. Stir together.
  6. Brush butter mixture over each potato, making sure that the butter gets into the crevices of each potato slice.
  7. Bake, uncovered, for 40-50 minutes or until potatoes are fork tender. 
  8. Garnish with grated parmesan and parsley and serve.
