An Easy Make Ahead Breakfast

Oatmeal in general is one of my favorite breakfasts. It’s quick, easy, and healthy. Oats are full of fiber, vitamins, minerals, and all sorts of things that help start the day off right. But overnight oats? Overnight oats are my absolute favorite.

They require just a few minutes of prep the night before (or a few nights before) and no work in the morning. Just pull them from the fridge and dig in! They are the definition of a “lazy breakfast” but I’m still filling up on fiber and protein to keep me full til lunch. Not to mention the many ways to customize them so I never get bored.

These Chocolate Peanut Butter Overnight Oats are my new favorite. They combine creamy peanut butter with cocoa powder for the perfect ratio of chocolate to peanut butter, plus the peanut butter adds extra protein. Half a banana and a dash of cinnamon and these overnight oats are out of this world.

What Are Overnight Oats?

Overnight oats are basically magic. They are oatmeal that requires 0 cooking, baking, or even microwaving and are customizable to whatever flavors and toppings you like. Instead of cooking in liquid, overnight oats sit in a liquid (like milk or nut milk) overnight, which softens them. By morning, you have soft, creamy oatmeal ready to go!

What You’ll Need

This easy overnight oats recipe requires just 7 easy ingredients.

  • Banana – Use a banana that is ripe but without too many brown spots.
  • Rolled oats – Use old-fashioned rolled oats, not quick oats or steel cut oats.
  • Peanut butter – Any brand of peanut butter or even homemade peanut butter will work.
  • Cocoa powder – Adds the chocolate flavor to the oats.
  • Chia pudding – Chia adds lots of fiber to the dish.
  • Cinnamon – For a hint of warmth.
  • Unsweetened almond milk – You can also use whatever variety of nut milk you prefer, just keeping in mind that it will change the flavor.

What Are The Best Oats for Overnight Oats?

Old-fashioned rolled oats are the best option for overnight oats. Quick oats will absorb the liquid too quickly and become mushy while steel-cut oats will not soften enough. Rolled oats, on the other hand, absorb the milk for a perfectly creamy but not mushy texture.
