Dijon Maple Glazed Salmon
I seriously, cannot even describe to you how amazing this weekend was! Do you know what the best part about it was? We basically did absolutely nothing!
I have been traveling on and off every other week for the past two months and to be able to just sit at home and not have any “to do’s” was incredible! We went out to dinner with my brother and his wife Friday night at one of our favorite places, sat outside, drank margaritas, and laughed! Saturday we woke up late (well to us 8:15am is late), just sat around, and then decided … let’s paint the office.. so all three of us piled into Mike’s car and went to the store to buy paint.
Truth be told, painting is something I love to do but don’t do nearly enough. It makes me happy to see a finished product and in the process I find it relaxing. (or maybe its just the fumes getting to me)
We finished off the day with some wine and Creamy Lemon Chicken Pasta that had sun dried tomatoes in it, which is actually going to be featured on Julie’s Eats & Treats blog next week (i’m a contributor over there).
I had been looking forward to this weekend for a while. Nothing special was planned but I think that was what I was looking forward too. I am a home body by nature and I definitely recharge by being alone for a little bit and this weekend was exactly what I needed.
How do you recharge yourself? Do you recharge when you’re with a group of people or at home reading a good book with a glass of wine?
Ok, change of subject! I don’t know if you’ve noticed, but over the past couple of weeks there are have been more seafood recipes on JHE. I’ve kinda fallen in love with the soft flaky texture of it and it feels lighter on my tummy then a big juicy steak. Although, sometimes a big juicy steak is needed. 🙂

Why This is The Best Salmon Recipe
What I love about this Dijon Maple Glazed Salmon is the tangy sweet flavor from the glaze. When the Salmon is baked with the Dijon Maple mixture is starts to caramelize and crisp up on the outside of the Salmon because the sugars in the maple syrup start to react to the heat of the oven. It is absolutely incredible!
Baking the fish as opposed to grilling it ensures consistent heat, so your fish will be cooked all the way through. As soon as I took the Salmon out of the oven and used a fork to test it, the Salmon flaked away perfectly and the flavor is OMG good!

Description
Dijon Maple Glazed Salmon is one of my favorite quick & healthy dinner recipes. It’s full of tangy and sweet flavors from only 3 ingredients with a whooping 218 calories per serving!

Ingredients
- 1.5 lbs Fresh Salmon Filet
- 1/4 cup stone ground dijon mustard
- 1/4 cup maple syrup (grade B)
- salt & pepper to taste
Instructions
- Preheat oven to 375.
- Pat salmon dry using a paper towel.
- Cover a baking sheet with parchment paper or tin foil.
- Place salmon on covered baking sheet.
- In a small bowl mix mustard, maple syrup, salt, and pepper. Whisk until smooth.
- Brush the mustard maple mixture on salmon, reserved a small amount for glazing later.
- Bake salmon for 9 minutes.
- Remove from oven, brush remaining mixture on salmon.
- Bake for an additional 3-5 minutes until salmon flakes with a fork.
- Remove and serve!
