At this point it is no secret that I am a potato lover. It wouldn’t surprise me if at some point over the last decade of The Healthy Maven that I’ve written a literal love letter to potatoes. Roasted, baked, grilled, steamed or fried, I do not discriminate. I love potatoes all ways, all days. These roasted fingerling potatoes are not exception. With grill season upon us, I love grilling up some burgers or kabobs and pairing them with these roasted fingerling potatoes. Which is exactly what I was doing the other day when I realized I’ve never actually shared this recipe.

It’s easy, it’s classic and you cannot go wrong with roasted potatoes. So next time you’re at the store, reach for a bag of fingerlings and give this recipe a try!

What are Fingerling Potatoes?

Potatoes come in all shapes and sizes and each has it’s own benefits! Fingerling potatoes are bite-sized potatoes that got their name because they’re shaped like fingers. They often come in different colors but all are delicious. Fingerlings tend to be waxier and thin-skinned. They are also lower in starch which makes them great for baking because they crisp up super well.

No need to peel your fingerlings either!

What You Need for Roasted Fingerling Potatoes

This recipe couldn’t be easier. You really only need 3 ingredients!

  • Fingerling Potatoes – you need 1 1/2 lbs. Generally sold in bags these size or measure them out
  • Olive oil – you can also use avocado oil if that’s all you have
  • Salt – I like sea salt but any salt will work

Optional toppings: You can also top these roasted fingerling potatoes with a few optional add-ons including: minced garlic, parmesan cheese or fresh or dried herbs. I personally like rosemary and parmesan but feel free to make these your own!

How to Make Fingerling Potatoes

STEP 1: Preheat oven to 425 degrees F. Wash and scrub your fingerling potatoes. Pat to dry.

STEP 2: Slice your potatoes in half, lengthwise.

STEP 3: Spread on a baking sheet and top with olive oil and salt. Bake for 20 minutes. Remove from oven and flip. Bake for an additional 10-20 minutes or until level of crispiness is reached.

STEP 4: If using add-ons, top your potatoes with them in the last 5 minutes of baking.

How to Store + Reheat

I generally find these fingerling potatoes don’t last long in our house but if you are storing and reheating, here’s how to do it:

Storing – store in an airtight container in the fridge for up to 3 days

Reheating – I find these are best reheated in the oven. Set oven to 350 degrees F, spread on a baking tray and bake for around 10 minutes or until warm. You can also reheat in the microwave but I do find they can get a bit soggy.
