Easy Whole30 Skillet Dinner
Craving a hearty meat and potatoes dinner? Then this easy skillet dinner is for you! Cubes of tender sirloin steak seared in mouth-watering garlic butter with baby potatoes and a few fresh herbs… all ready in under 30 minutes! Dinner doesn’t get better (or easier) than that!
This is one of my favorite Whole30 recipes to serve when we have guests – especially guests who don’t follow Whole30. Steak and potatoes is a dish that everyone seems to love, so you can’t really go wrong when you serve it. It’s a timeless classic and this skillet recipe just makes it easier than ever to make!
What You’ll Need
Just 6 ingredients are needed to make this easy Whole30 skillet dinner!
- Top sirloin – Cut into 1″ cubes.
- Salt and pepper
- Ghee – Instead of traditional butter, ghee is used to make the “garlic butter” portion of the recipe.
- Garlic – LOTS of garlic is used in the making of this recipe!
- Rosemary & thyme – Fresh, chopped herbs give the steak and potatoes skillet a savory flavor.
- New potatoes – Cut in half.
Can I Use A Different Type of Steak?
I like to use sirloin because it’s tender and has a good flavor. However, other cuts like tenderloin, ribeye, and strip steak will also work. Just use one that is cut relatively thick (about 1″) and be sure to cut against the grain.
How to Make Garlic Butter Steak and Potatoes Skillet
This skillet dinner recipe comes together in under 30 minutes with just a few simple steps.
- Season the potatoes. Toss the halved new potatoes with rosemary, thyme, part of the garlic, and salt and pepper to taste. Set aside.
- Sear the steak. Season the steak cubes with salt and pepper. Add the ghee and garlic to a heated large skillet. Add the steak. Sear both sides for 3 minutes each. Remove from the pan and set aside.
- Saute the potatoes. Add the remaining ghee to the skillet and reduce heat. Add the entire bowl of potatoes. Saute until browned and cooking through, about 10 to 15 minutes.
- Combine and serve. Once the potatoes are finished, add the steak back to the pan and stir everything together. Cook for 1 to 2 minutes and serve.
Tips & Variations
For tender and perfectly flavored ingredients, keep the following things in mind when making this garlic butter steak and potatoes skillet.
- Try a different seasoning or marinade. I used a simple seasoning on the steak but you can also add a marinade if you wish. Soy sauce or amino acids with a dash of sriracha makes a great combo but any Whole30 marinade you’d like to use will work. Alternatively, you can just use different seasonings instead.
- Use quality ingredients. Since there are so few ingredients used in this recipe, be sure to use the best, freshest ones you can find. Splurge on a good piece of steak and choose fresh herbs that aren’t wilted and potatoes without any spots.
- Cut everything into equal pieces. For equal cooking times, be sure that the steak cubes and potato halves are more or less the same size. This is especially important with the steak to avoid overcooking.
- Make sure the skillet is hot before adding the steak. To ensure a good sear and tender steak, it’s essential that the skillet is already hot before adding the steak cubes. It should take less than 5 minutes to cook the cubes.
Serving Suggestions
The only thing missing from this garlic butter steak and potatoes skillet is a side of veggies! I like to serve this skillet dinner with a bright green salad, whether it’s my go-to everyday side salad or something a little fancier like my broccolini salad.
Instead of a salad, you could also serve this skillet dinner up with some grilled veggies or crispy brussel sprouts.
How to Store & Reheat Leftovers
While these garlic butter steak bites and potatoes are best enjoyed immediately, they can be stored in the fridge for up to 4 days. You can either reheat it in the microwave or on the stovetop. I recommend reheating the potatoes first if possible as they may take longer to heat through and to avoid overcooking the steak.

Ingredients
- 1.5 lbs. top sirloin, cut into 1” cubes
- salt & pepper to season
- 2 tablespoons ghee
- 5 cloves of garlic, minced
- 1 tablespoon rosemary, chopped
- 1 tablespoon fresh thyme
- 1 lb. new potatoes, halved
Instructions
- To a small bowl, add halved new potatoes, rosemary, thyme and 3 cloves of minced garlic. Season with salt and pepper. Toss and set aside.
- Generously season steak cubes with salt and pepper.
- Heat a large skillet to high heat. Add 1 tablespoon of ghee to the pan along with 2 cloves of garlic minced. Immediately add in the seasoned steak and sear both sides of each cube for 3 minutes. Remove the steak from the pan and set on a plate.
- Reduce heat to medium to medium high. Add another tablespoon of ghee as well as the entire bowl of prepared potatoes. Saute potatoes until browned and cooked through, around 10-15 minutes. Stirring occassionaly so as not to burn the potatoes.
- Once potatoes are cooked, add steak back to the pan and stir everything together. Cook another 1-2 minutes and serve.
