Pulse fresh or thawed strawberries with maple syrup in a food processor until almost smooth, leaving a few small chunks.

In a large bowl, whip cream and strawberry mixture with a hand mixer until fluffy.

In another bowl, whip optional egg whites (separated from fresh eggs washed in warm, soapy water first) with hand mixer until stiff peaks form.

Fold in optional whipped egg whites until just blended for a firmer strawberry mousse.

Serve immediately. Refrigerate leftovers in a glass bowl with a secure lid for up to 4 days.
